Simple Preservative-Free Stock Recipe that saves SO much time
This preservative-free stock recipe is an absolute godsend for our household, because with kids who are allergic to certain preservatives, I have had to learn to be not only gluten-free, but also as preservative-free as possible.
This simple recipe is cost-effective as time-saving, too - because it’s a simple ‘2-minute-chop, 20-minute simmer’ situation that brings SO much flavour when you need that stock base for a recipe!

Why I use preservative-free
Preservative-free is something we are working on HARD in our household, and while we still have some packet-mixes and snacks, I’m working on being as simple & low stress as possible over here! Since my daughter (and now son) reacts to so many preservatives, I can’t use stock cubes or powder much, and you may know that there are gluten-sensitive people in my household too - more on how I have seen gluten affect behaviour coming soon!
My simple time-saver Preservative-free stock recipe
Full disclosure: bacon does often have preservatives used when it is originally made, but apart from that it’s free from nasties!
A major reason this recipe is so fast is that you make it when you have just finished cooking bacon for something else. When my family have bacon and eggs sometimes on a Saturday morning, or if I make a quiche with bacon, this is a simple way to make the best of that gorgeous bacon-y flavour! (Try chicken instead, that’s a good one too!)

Ingredients:
Bacon ‘fat’ in a pan, still warm in the pan.
1 onion, diced
2 sticks of celery, chopped
1 carrot, diced
1L of water
Method:
When you have had bacon and eggs or something similar, while you wait for the toast to cook, cut up an onion, 2 sticks of celery & a carrot (If you watch this on Youtube shorts, you can see that my celery is frozen from when I had a glut of celery in the garden. So much celery - so I froze some for exactly this moment! Another cost-effective, time-saving idea right there!

Throw it all in the pan with the yummy bacon fat and sweat it all for 5 mins with a pinch of salt if you need, and some pepper.
Then add 1-1.5L water (depending on how much you want) and stir, while you wash the dishes or something else you need to do in the kitchen.
Leave to simmer for 20 mins. Pop into a container or a ziplock bag (If you use a bag, let the stock cool for awhile first).
Freeze for quick moments in future cooking, preservative-free!!
